potato donuts - redux

In preparation for the big sled trip next week, started getting some meals ready to eat up at the camp this weekend.....three kinds of schnitzel Saturday (have breakfast schnitzel left over from last cook off) (a search on the forum will reveal the schnitzel recipe from a couple of years ago if you need it)

and decided to give the previously posted Potato Donut recipe from Quebec a try.....

Second attempt as pictured below was much better than the first.....translated from the French .....crushed means mashed....also, COOK the potatoes before attempting to smash them.....one pound of mashed potatoes is about 1 3/4 cups...I evened it up to 2 cups without any detriment.....

Dough as outlined goes into the fridge for 24 hours....you will need an extra cup of milk - and melt your butter before adding - other than that the recipe is pretty good. I added some cinnamon and apple bits for extra flavour as well as an extra table spoon of vanilla....

 

Decided to go free form for this batch - saves work cutting out the holes.....if holy donuts are your thing, you roll out the dough in a sheet about 1/2 inch thick, use a large mug to cut the outer edges and the pill container from your cholestoral medicine to cut the holes in the middle....

four minutes on the other side.....

plus an extra minute on the first side again....your results may vary....

 

Drain and have your sous chef glaze with maple syrup, jam or maybe sprinkle with icing sugar....

Makes a nice breakfast. Add fruit to make it ....healthy......

DIY tip - a rolling pin works great for fastening peel and stick flooring with the proper surface prep....

Looks great. Make enough for your riding partner too, cough, cough, poke poke. 

Next year once I get into my new kitchen I will do something similar.
